What Makes Matcha Safe? Inside Yūzen's Quality Control Process

When you're choosing matcha, you want something that's safe, clean, and actually lives up to what's on the label. But what guarantees that your matcha is free from contaminants like heavy metals, bacteria, or fillers?

This is where quality control comes in. And not all quality control is created equal.

At Yūzen, we don't just test matcha once and call it a day. Every production lot undergoes rigorous lab analysis and sensory evaluation to verify safety, purity, and consistency. Here's what that actually means.

Why Quality Control Matters for Matcha

Matcha is a processed agricultural product. That means it's subject to the variables that come with farming—soil composition, weather, harvest timing. Without proper oversight, those variables can lead to contamination or inconsistent quality.

Quality control ensures that what reaches your cup is safe, pure, and consistent. It's what separates real matcha from green powder.

How Yūzen Manages Quality

Our Japanese partners manage production quality under FSSC 22000 certified food safety management. This certification is recognized globally and ensures that production processes meet the highest standards for food safety.

Every production lot undergoes two levels of evaluation:

  1. Physicochemical analysis conducted by the Quality Assurance team

  2. Sensory evaluation performed by the Raw Material Procurement team, composed of tea experts

Both are compared against the previous lot to verify consistency.

On-Site Verification
Quality control isn't just about paperwork and lab reports. We conduct bi-yearly visits to our processors and farms in Uji—the heart of where all our matcha is made. During these visits, we meet with tea specialists, observe production processes firsthand, and ensure that the standards we set are being maintained at every stage.

This isn't outsourced oversight. It's direct accountability.

FSSAI Testing: The Final Checkpoint
Before any shipment reaches India, it undergoes one more layer of scrutiny. Every shipment is rigorously tested under FSSAI (Food Safety and Standards Authority of India) guidelines for heavy metals, pesticides, and microbial contaminants before it reaches our warehouse.

This is the final checkpoint. The essential groundwork that lets us deliver with full confidence to multinational coffee chains, hotels, specialty cafés, and homes alike. We don't skip this step. We don't rush it. And we don't make exceptions.

Lab Analysis: What We Test For

Each batch is tested for the following:

Test Name

Standard

Method

Why it matters

Total Bacterial Count

< 3,000 cfu/g

Agar plate method

Indicates contamination; ensures safety.

Coliforms

Negative

BGLB method

Indicates fecal contamination or poor sanitation; must be negative.

Moisture Content

< 5%

Heating loss (Infrared analyzer)

Prevents clumping, spoilage, mold; ensures freshness and shelf-stability.

Color

No abnormality (Monitoring)

Lab* color analysis

Indicates freshness/quality; vibrant green shows proper processing.

Particle Distribution

No abnormality (Monitoring)

Laser diffraction method

Ensures smooth texture/suspension; detects inconsistent milling.

Sensory Evaluation: The Human Element

Lab tests tell us if matcha is safe. Sensory evaluation tells us if it's good.

Our Raw Material Procurement team—composed of tea experts—evaluates every batch using a deduction-based scoring system. They assess:

  • Appearance: Is the color vibrant and consistent?

  • Aroma: Does it smell fresh, vegetal, slightly sweet?

  • Flavor: Is it balanced, smooth, free from bitterness or off-notes?

  • Texture: Does it whisk smoothly and suspend well in liquids?

Each batch is compared to the previous one. If there's a significant difference, we investigate.

Why Batch Testing Is the Gold Standard

Batch testing means we don't just test matcha once during development. We test every production lot. Every single time.

What This Means for You

When you choose Yūzen, you're choosing matcha that's been rigorously tested for safety, purity, and consistency. No shortcuts. No fillers. No guessing.

We list our cultivars. We tell you where it's from. We show you how it's processed. And we test every batch to ensure it meets the standards we've set.

That's not marketing. That's accountability.

Your body deserves ingredients you can trust and understand. Now you have them.
