INDIA’S FIRST MATCHA OMAKASE

On August 23, 2025, we set down something we'd been thinking about for a long time. India's first Matcha Omakase, at Fiori. A sequence of courses, each one a different expression of the same leaf. Temperature changes, preparation shifts, but the matcha never loses itself. That's what quality does. It holds.

Omakase means "I leave it up to you." A transfer of trust from guest to creator, which in the end, is what any good meal asks of you.
